Veggie Vistara

A healthy veggie bowl can be tasty and healthy at the same time.

Ingredients-

  • Vegetables: Broccoli florets, sliced carrots, sliced zucchini or cucumber, roasted or steamed squash/pumpkin, and thinly sliced radishes.
  • Legumes: Chickpeas.
  • Dip/Spread: Hummus, topped with what appears to be paprika or another spice.
  • Garnish: Fresh dill or a similar herb.

Instructions-

  1. 1. Prepare Vegetables:
    Wash and chop desired vegetables. Toss them with olive oil and seasonings (salt, pepper, garlic powder, paprika) and roast on a sheet pan until tender and slightly caramelized. 
     
  2. 2. Prepare Protein:
    If using tofu or tempeh, cut into cubes and season, then roast or pan-fry until golden. 
     
  3. 3. Prepare Chickpeas:
    Roast or pan-fry drained and rinsed chickpeas with a little olive oil and spices until crispy. 
     
  4. 4. Assemble the Bowl:
    Arrange cooked grains (if using) at the bottom of a bowl, then artfully arrange the roasted vegetables, protein, and chickpeas around a dollop of hummus in the center. 
     
  5. 5. Finish:
    Drizzle with a prepared dressing and garnish with fresh herbs.
