Veggie Vistara
A healthy veggie bowl can be tasty and healthy at the same time.
Ingredients-
- Vegetables: Broccoli florets, sliced carrots, sliced zucchini or cucumber, roasted or steamed squash/pumpkin, and thinly sliced radishes.
- Legumes: Chickpeas.
- Dip/Spread: Hummus, topped with what appears to be paprika or another spice.
- Garnish: Fresh dill or a similar herb.
Instructions-
- 1. Prepare Vegetables:Wash and chop desired vegetables. Toss them with olive oil and seasonings (salt, pepper, garlic powder, paprika) and roast on a sheet pan until tender and slightly caramelized.
- 2. Prepare Protein:If using tofu or tempeh, cut into cubes and season, then roast or pan-fry until golden.
- 3. Prepare Chickpeas:Roast or pan-fry drained and rinsed chickpeas with a little olive oil and spices until crispy.
- 4. Assemble the Bowl:Arrange cooked grains (if using) at the bottom of a bowl, then artfully arrange the roasted vegetables, protein, and chickpeas around a dollop of hummus in the center.
- 5. Finish:Drizzle with a prepared dressing and garnish with fresh herbs.
